Chewy Lemon Soft Cookies

If you love soft cookies, you're going to love this!


I had extra butter blocks in my fridge and some lemons my mum bought at the pasar. So, I thought I'd make some soft lemon cookies. This batch will make up to 2 dozens of cookies, depends on the size of your cookies. I did mine quite big, so, I got only around 1 dozen and a half :p Cooking time? 8-10 mins.

I've been busy with NiE recently. Though, I did some time making a few sweet treats at home. Well, you know me. I'll eat when I get bored. I feel full whenever I finished cooking something though xD

Red Velvet Cupcakes

Red Velvet. I know it's a trend now in Malaysia. Next to overly priced macarons. ANYWAY, this is not a macaron recipe. This is a red velvet recipe. I know you guys saw the pic. Tempting, I know.

My recipe is adapted from a famous YouTube chef. Chef John from Foodwishes.  His recipes are AMAZING. Well, not that I tried all of them, I just found it delicious, by the looks of it. Somehow like how Nigella Lawson and Jamie Oliver does on TV. Oh yeah, if you don't know these two other worldly celebrity chefs, you are missing something great in your poor life! FOOD PORN that is.

Carrot Cupcake with Orange Cheese Frosting

This is my mother's recipe she adapted after a TV show somewhere. I've made my modifications also. Us, females in my family, have a thing for experiments in the kitchen. We'd add in a slight unexpected ingredient in our recipes. Bravery in the kitchen HAHA. Anyway, hope you guys aren't afraid to do so yourselves!

Cream Cheese Frostings

There two types of cream cheese frostings that I like. The oozy and creamy kind and the meringue buttercream kind. The basic cream cheese recipe is a lot sweeter and melts faster than the meringue buttercream due to our country's hot weather. The meringue buttercream is light and it holds it shape. Perfect for piping with different piping tip shapes. I'll compile both recipes for you, so you can choose which you'd want :D

Blueberry Muffins!! :D


Yumm..Yumm...~ my mom made muffins again today.. this time it sunken, instead of becoming a volcano~ ahahaha it was nice though.. i like eating the top parts of it~ crunchy-sweet-muffin-top, when u get to the bottom of the muffin, it tastes like a normal cake..

yeah today's post? i wanted to show my mom's muffin.. hahaha she tried to experiment with the recipes.. and this happened!


it was yummy though!

these just came out of the oven a few minutes ago.. my tongue is burning for not being patient.. hahaha:D serves me right~ if u guys want to make muffins later, let me join with ya! call me, message me, fb me, and whatsoever ways to get to me!

cupcakes and frosting/icing

ok, we're going to have this icing contest at our school, so, i looked up for frosting & icing recipes... this one caught my eye for the easiest i could find..-->

(Buttercream frosting)
Ingredients:
1 cup of butter (softened)
3 to 4 cups of icing sugar (depends)
1/2 a tsp of salt
1 tbsp of vanilla essence
3 to 4 tbsp of milk or cream (depends)

Directions:
cream butter until smooth, add 3 cups of icing sugar and mix.
then add the vanilla, salt and 2 tbsp of cream or milk.
mix until suit to desired consistency.

(Simple sweet icing)-->
mix 500g of icing sugar & 5 tbsp of water, add food colouring if desired..

well, that's all... pretty easy right? well, this is the icing recipe only...

Ingredients:
175g of butter
175g of caster sugar
1 tsp of vanilla essence
3 eggs (beaten)
175g of all-purpose flour (sifted)
1/2 tsp of baking powder
1 tbsp of milk (depends)

Directions:
cream butter& sugar together, add vanilla essence, mix until smooth..
gradually add in the beaten eggs.
gently fold in flour and baking powder mixture, add milk if it's too thick.
put into cupcake cases 3/4 full,
bake in a pre-heated oven for about 12 to 15 mins.
take out and cool on rack.

of course we ice the cupcakes.. hope u guys copy these recipes and experiment at home first before bringing to school! ^^ see ya~
