Carrot Cupcake with Orange Cheese Frosting

This is my mother's recipe she adapted after a TV show somewhere. I've made my modifications also. Us, females in my family, have a thing for experiments in the kitchen. We'd add in a slight unexpected ingredient in our recipes. Bravery in the kitchen HAHA. Anyway, hope you guys aren't afraid to do so yourselves!



This makes around 12 cupcakes.

You will need:

250gm(1 bar) of butter (melted)
2 1/2 cups flour (sifted)
1 1/2 cups sugar (fine)
1/2 cups blended/chopped almonds or any other nuts you like(Optional) <---I used sultanas in this recipe.
3 eggs (beaten)
1 1/2 tsp baking powder
1 cup(1 stick) carrot (grated)
1 tsp vanilla essence
Salt

How to:
  1. First, you'll have to melt the butter in a pan or microwave, suit yourself. Just make sure you don't burn it. Meaning no brown coloured butter in the pan.
  2. In a large mixing bowl, combine the dry ingredients, flour, baking powder, sugar and nuts.
  3. Crack in the eggs and pour in the melted butter in the bowl.
  4. Mix well and then add in your grated carrot. Mix till combined.
  5. Transfer your mixture in a cupcake tin lined with paper cups. Fill in 3/4 full. You don't want the batter to overflow when baked.
  6. Put it in a preheated oven at 180 C for around 10~15 minutes, depends on your cupcake size. The bigger it is, the longer it will take to cook.
  7. Poke the cakes with a toothpick to check if it is done. If the toothpick comes out clean, your cupcake is done!
  8. This is will be far better enjoyed with orange cheese frosting (here) :]
