'Malaysianized' Okonomiyaki

Okono~ Okonomiyakiiii~ I love this thing. To me, it's somewhat a mix between a meal and a snack. I used to make this whenever I reach home after a hard day at school. Actually, if you search for the real Japanese pancake recipe, it is sooo far off the recipe. WHY? Because they use so much of their local foodstuff which we, Malaysian, find it hard to get. So, it's not REALLY typically Japanese.



Anyway, whatever this thing is called, it is simply great! The thing about this savoury pancake is, you can add in whatever foodstuff you want to eat. Here I used chicken sausages, but you can always opt to maybe to some beef slices with carrots or some celery or scallions lined up together with seafood(like the Korean pancake: Pajeon)

Do it anyway you like! I'm just going to guide you with I did :)

I did (serving for 2):

BATTER
1 cup flour
1/2 cup water (add more if needed)
1 egg
1 tsp salt and grounded black pepper
1 cup cabbages (shredded) (the only 'Japanese' part of the pancake :\)
1 stick spring onion (chopped)

OPTIONAL
2 stick frankfurters/sausages (sliced at an angle)

DRESSING
2 tbsp black pepper sauce
1/2 lime juice
Kewpie Mayonnaise (I found this at Giant Nilai and bought it JUST to make this pancake xD)

How to make:

  1. Mix all the ingredients for the flour batter. You should get a smooth and not-so-thick batter.
  2. Add in the cabbages and spring onion. If you use carrots, make sure it is chopped small. So, you'll get cooked carrot for the pancakes and not a carrot salad. Set aside.
  3. In a pan, heat some oil and pre-fry the sliced sausages until slightly brown. Place it on a plate after you pre-fried it and set aside.
  4. On medium heat, re-oil the pan and ladle in the batter. Make sure the first layer of the batter is very thin and large in diameter.
  5. Align the sausages on the batter in the pan and then spoon on some more batter on top of it.
  6. Fry both sides until golden brown. You may need to cover the pan if the batter is too thick and let it cook.
  7. While waiting for the pancake to cook, mix the blackpepper sauce and lime juice and set aside.
  8. When the pancake is done, brush the black pepper-lime sauce on top of it. You can garnish with more spring onions and sausages you pre-fried earlier. Squeeze the Kewpie mayo on top and it's DONE!
