Butter Prawn Baskets (YUMMY!)

YAY! Another recipe! It's been awhile since I've made something savoury. Sooo how about this? Don't they look scrumptious?! And they were scrumptious! The baskets are made up of grated potatoes and filled with goodies like butter sautéed prawns. Mine made up for about six small baskets. You can adapt the recipe to your own taste and portion :)

So, wanna make it with me? :D



 What you need :
3 medium potatoes (grated, salted and squeezed)
10 medium tiger prawns (peeled and deveined)
1 cup of cabbages
2 tbsp of butter
2/3 of a Holland onion
1 clove garlic
2 large eggs
Salt & black pepper to taste

THAT'S ALL YOU NEED!

How to prepare it :
  1. Grate the potatoes (use the large size grater) and then place it in a bowl. Put in half a teaspoon of salt in the bowl, toss it a bit and leave it aside for awhile.
  2. Devein the prawns and wash it. Set aside. Devein by the means of removing the food sac of the prawn. Like so.

  3. Medium dice your cabbage and onion and set aside. Finely dice your garlic and set aside.
  4. Look back at the grated potatoes, you can see water coming out of the potatoes. Get yourself a cloth or a strainer and squeeze the hell out of it.
  5. Get yourself a large-sized muffin tin and spread some oil inside it. Just so the grated potatoes won't stick to the muffin tin. Fill in your potatoes and evenly push it to the sides and base.
  6. Place the tin into a preheated oven(180 C) and leave for around 10 minutes or until golden brown. Make sure you can hear the base of the potatoes crackle when you tap it. (crispy base)
    Mine didn't brown much, because I was impatient. :p
  7. In a heated pan, place in the butter, a bit of oil and add in the onion and garlic. Sauté for a while and then put in your diced cabbage. Season with salt and pepper. Make sure you make the filling saltier because the potatoes are not seasoned. 
  8. Add in your prawns after the cabbages have wilted. Turn off the heat just after you put in the prawns. You don't want rubbery prawns after it have been baked in the oven.
      A bit over cooked. You still want the prawns to be uncooked.
  9. Now put the filling in the potato baskets you pre-baked. Crack two eggs in a pouring cup and pour the beaten egg into the basket. 
      I had my prawns cut up, but you can leave yours full.
  10. Turn down the heat of the oven and put the tin back into it and leave until the egg has cooked that's for about 8 to 10 minutes.
  11. Take out the baskets from the oven and let cool for awhile before you serve. It'll break apart if you dig in too quickly.

This is a small batch off the recipe
For the 'sauce' :
1 tbsp mayonnaise
Zest of 1 lime
Juice of 1/2 a lime
Cucumber (optional)

HOW :
  1. Mix all the ingredients above.
  2. You can finely dice the cucumber and add in the mixture for it to be extra refreshing.
  3. The zest really brings out the flavour of the lime. You can use lemons instead of limes. This is all I had in my refrigerator.
  4. Put over the warm baskets and toss over some chives or scallions like I did. ENJOY :D
AND IT IS OFFICIALLY DONE :D

OH YEAH. The pan.
If you have extra veges lying around like broccoli or some other vegetables, steam(or boil) it until half-cooked, and toss it in the pan you used for sautéing the prawns and cabbages. It's soooo good as a side dish :D
