Chewy Lemon Soft Cookies

If you love soft cookies, you're going to love this!


I had extra butter blocks in my fridge and some lemons my mum bought at the pasar. So, I thought I'd make some soft lemon cookies. This batch will make up to 2 dozens of cookies, depends on the size of your cookies. I did mine quite big, so, I got only around 1 dozen and a half :p Cooking time? 8-10 mins.


You'll need:

1 cup butter
1 cup granulated sugar
2 3/4 cup all-purpose flour
1 tsp baking soda
1/2 baking powder
1/2 tsp salt
1/2 tsp vanilla extract(essence)
1 large egg
Zest of 2 large lemon (how to zest)
2 tbsp lemon juice
1/2 cup brown sugar + 2 tbsp regular sugar (for rolling)

How to make:

  1. Ready your sheet pans lined with greased paper or buttered paper. Also ready your brown sugar mix on a plate for rolling later.
  2. In a bowl, whisk flour, baking soda, baking powder and salt. Set aside.
  3. Using a mixer, cream butter and sugar until fair and creamy.
  4. Add lemon zest, lemon juice, egg, vanilla extract. Mix by hand until well combine. Gradually add in the flour mix into the bowl. (Optional : Add in a few drops of yellow food colouring to make it a bit more appealing. Because mine was a bit blonde.)
  5. Roll cookie dough into medium sized tablespoons and roll into brown sugar mix.
  6. Place on prepared sheet pans, about 1 1/2 inches apart. Bake for 8-10 mins or until slightly brown around the edges and set. Cool the cookies IN THE PAN for about 2 mins, THEN you put it on a cookie rack to cool completely.
NOT LIKE THIS!
*To keep the cookies soft, store cookies in air tight container with a slice of bread in it. 


These cookies were soft, chewy and crunchy at the same time. Both sweet and tangy compliments each other. Damn I want another one right now! So, what are you guys waiting?!
